Chef Klaus with Grilled Broccoli and Bacon Salad

Warm Salad Recipe

🍴 4 servings
⏰ 15 minutes prep
♨️12-14 minutes grill

INGREDIENTS:
1 pound broccoli, cut into large florets
2 tablespoons light olive oil
½ teaspoon kosher salt
¼ teaspoon black pepper, ground
6 slices bacon, cooked and chopped
1 tablespoon Dijon mustard
2 tablespoons red onion, peeled and minced
3 tablespoons light olive oil
2 tablespoons parmesan cheese, shredded
1 teaspoon lemon juice, fresh squeezed

RECIPE:
1. Set the grill for direct, medium heat grilling (350 -450F). Place a grill basket on the grill to pre heat for at least 10 minutes.

2. While the basket pre heats, toss the broccoli with the light olive oil, salt and pepper in a bowl.

3. Once the grill pan is hot, add broccoli. When lifting the broccoli out, allow the excess oil to drain before placing in the grill basket. Close the lid.

4. Cook the broccoli over direct, medium heat for 8-10 minutes, turning every few minutes. Move to indirect to finish. The broccoli is done when slightly soft in the stem and nicely browned.

5. When the broccoli is cooked, use heat-proof gloves to remove the grill pan with the broccoli from the grill. Set aside in a safe place to cool a few minutes.

6. Mix together the mustard, red onion, olive oil, lemon juice in a large mixing bowl, add the bacon.

7. Toss the broccoli in the bowl, add parmesan, mix together with the rest of the ingredients and serve.
